Giant Sharing Cookie Recipe

I recently received a lovely treat box from Aldi, which included the ingredients to make this beauty of a big cookie! Measuring at around 30cm, it's definitely one for sharing!

We made this with the little ones today, lots of fun, very easy to make and ready to eat in just around a half an hour.


Prep time: 10mins

Cooking time: 17mins


Ingredients:

150g 'The Pantry' Self Raising Flour

60b 'The Pantry' Caster Sugar

130g 'The Pantry' Light Brown Sugar

90g 'Kilkeely' Unsalted Butter (at room temperature)

25g 'The Pantry' Cocoa Powder

1x 'Healy’s Farm' Irish Fresh Egg

25g 'Moser Roth' Milk Chocolate (chopped into chunks)

25g 'Moser Roth' 70% Cocoa Dark Chocolate (chopped into chunks)

Method:

  1. Preheat the oven to 170°c

  2. Put all the ingredients, except the chocolate chunks, into a food processor and blend until smooth

  3. line a large baking sheet with some baking parchment

  4. Roll the dough into a ball and place in the centre of the tray

  5. Roll, or spread out, the dough with your fingers until you have a 25cm circle

  6. Leave some room on the tray as it will spread while cooking

  7. Sprinkle the chocolate chunks over the top l, then gently push them slightly into the dough

8. Bake in the oven for 15-17mins until firm to touch

9. Allow to cool and enjoy

Serving suggestions; top with ice cream or drizzle with sauces.. or have it warm with a large cup of tea! Also, if you're not going to devour this straight away, I suggest cutting it up into smaller pieces so you can store them easier for later!
