Killowen Distillery is continuing its experimental whiskey journey with the latest release in its Contours of Killowen series: Cask KD#203, a rye Irish whiskey fully matured in a Cabernet Sauvignon cask.

The Northern Ireland distillery is known for its hands-on, experimental approach to spirits, and this latest release offers another opportunity to explore how different distillation techniques and cask choices can shape a whiskey.

Meet Cask KD#203

Described as a Rye Irish Whiskey – Column Still – Cab Sav Full Term, Cask KD#203 marks a milestone for Killowen. According to the distillery, it is the first whiskey to pass through its hybrid column still, named Columbanus.

Fully matured in a Cabernet Sauvignon (Cab Sav) cask, the whiskey explores the relationship between spirit and wood, with the distillery highlighting the balance that can be achieved through this maturation approach.

A Berry-Forward Whiskey Profile

Killowen's tasting notes suggest a flavour profile built around red and dark berries, sweet pastry and almond.

On the nose: Blueberry and strawberry tart or pie, accompanied by a touch of lemon zest over almond paste.

On the palate: Mixed berry jam, with the almond and glazed cherry characteristics of a Cherry Bakewell taking centre stage.

On the finish: Shortbread alongside raspberry and blueberry compote.

The tasting notes point towards a dessert-inspired profile, combining fruity notes with pastry-like sweetness and almond character.

Release Date and Price

Cask KD#203 is scheduled for release on Wednesday, 21st October 2026, at 4pm (Killowen time), priced at £65. Anyone interested in securing a bottle should check the distillery's official purchase link for availability, delivery options and any applicable shipping charges.

Another Chapter in Killowen's Experimental Journey

With its hybrid column still and full-term Cabernet Sauvignon cask maturation, Cask KD#203 continues Killowen's exploration of how production methods and cask selection can influence Irish whiskey.

For whiskey enthusiasts who enjoy discovering smaller experimental releases, this latest Contours of Killowen bottling is one to keep an eye on.
