Ingredients
140g softened butter, plus extra for greasing
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed
Method
Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4. Grease and line a 900g (2lb) loaf tin.
Cream the softened butter and caster sugar together until light and fluffy.
Add the beaten eggs one at a time, mixing well after each addition.
Sift the self-raising flour and baking powder together, then fold into the wet mixture.
Stir in the mashed bananas until just combined.
Pour the batter into the prepared loaf tin and smooth the top.
Bake for 50 minutes, or until a skewer inserted into the centre comes out clean.
Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
