Ingredients

  • 140g softened butter, plus extra for greasing

  • 140g caster sugar

  • 2 large eggs, beaten

  • 140g self-raising flour

  • 1 tsp baking powder

  • 2 very ripe bananas, mashed

Method

  • Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4. Grease and line a 900g (2lb) loaf tin.

  • Cream the softened butter and caster sugar together until light and fluffy.

  • Add the beaten eggs one at a time, mixing well after each addition.

  • Sift the self-raising flour and baking powder together, then fold into the wet mixture.

  • Stir in the mashed bananas until just combined.

  • Pour the batter into the prepared loaf tin and smooth the top.

  • Bake for 50 minutes, or until a skewer inserted into the centre comes out clean.

  • Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
