RECIPE

Chilli and Lime Prawns with Potatoes and Asparagus

 

Ingredients

  • 1 kg large, peeled prawns

  • 500 g chat potato

  • 2 bunch asparagus

  • 2 limes

  • 1–2 chilli

  • 1–2 cloves garlic, crushed

  • 75 ml light olive oil

  • ¼ bunch parsley

  • ½ bunch coriander

  • 50 ml fish sauce

 

Method

  1. Place prawns in a bowl with half the fish sauce and garlic. Marinate for at least 30 minutes.

  2. Slice potatoes into coin-sized pieces, mix with oil. Trim asparagus (remove first 5 cm), cut in half, slice chilli. Combine with prawns, remaining fish sauce, and mix.

  3. Pick, wash, and chop parsley and coriander. Zest and juice the limes, set aside.

  4. Select Full Surface Grill at 275°C. Arrange potatoes on a baking paper-lined tray and grill on level four for 8 minutes.

  5. Add the prawn and asparagus mix on top, grill for a further 6–8 minutes.

  6. Once prawns are cooked, transfer to a serving bowl. Stir in herbs and lime zest/juice. Serve immediately.
