Pearse Lyons Genesis Release is the first Dublin Distilled Single Malt Whiskey to be produced on the Altar of St James. It is the culmination of the work of generations of the Lyons family in the Dublin Whiskey industry. Five generations of Coopers, before Dr. Pearse Lyons started distilling in Dublin in 2017 and with Dr. Mark Lyons now being the 7th Generation.
This inaugural Release is a vatting of just four hand selected casks, that were distilled in the summer of 2017. Two casks were aged in Town Branch Bourbon Barrels only and two casks aged in Town Branch Bourbon Barrels, then Finished in Virgin Oak.
Genesis showcases both Pearse Distillery's own distilled Dublin whiskey and their access to the best possible quality casks, sourced from their sister distillery – in Lexington Kentucky. This is another significant milestone release in the Pearse Lyons Whiskey journey, following in the footsteps of the previously released 5-year Single Malt in 2017. That whiskey was the first whiskey to be distilled in Carlow in 2012, on the same Kentucky Vendome stills that are operating in the Pearse Lyons Distillery today.
Genesis release is a limited edition of 888 hand numbered bottles, presented in a bespoke Spire Case to respectfully pay homage to it's distillery’s origins. It is bottled at a Cask Strength of 57.1% abv, Natural Colour & Non-Chill Filtered.
Tasting Notes:
Nose:
A vibrant whiskey with wood shavings and leather notes to begin, leading into hints of fruit cake, crisp apple, raspberry, pine and nutmeg spice. This is layered with a rich vanilla and demerara sweetness with cereal biscuit aromas of baked biscuit to finish.
Palate:
Rich and bold on the palate, with caramelised oak, silky vanilla, baked apple crumble flavours and a light toffee viscosity. These flavours then taper off leaving wood resin, cherry, cinnamon, clove, cracked pepper, and lemon citrus on the palate.
Finish:
A long lingering finish of orchard fruits of apple and pear meeting with a very pleasant delicate tingle white pepper and oak spice.
