Redacted Independent Bottlers Unveil Redacted Whiskey 003 - A Dick Mack's Exclusive 11-Year-Old Single Malt from Dingle Distillery

Redacted Whiskey has proudly announced the release of its latest expression, Redacted Whiskey 003, an exceptional 11-Year-Old Single Malt distilled in December 2013 at the renowned Dingle Distillery. First matured in bourbon casks and re-casked in May 2021 into a rich Sauternes cask, this release captures more than a decade of patience, craftsmanship, and innovation.

The result is a whiskey of depth and character. On the nose, honeysuckle, apricot, caramel, and vanilla set the stage. The palate reveals layers of rich malt, candied citrus, and white peach, leading to a lingering finish of almond, honey, and gentle warmth. Bottled with natural colour and no chill filtration, Redacted Whiskey 003 represents whiskey in its purest form.


A Historic Release

This release is more than just whiskey — it’s a piece of history. Distilled and bottled in the Gaeltacht, Redacted Whiskey 003 was created exclusively for the legendary Dick Mack’s Pub in Dingle. The label proudly features Dingle Irish, celebrating the region’s cultural heritage. A true partnership between friends, Mick and Ronan (Redacted's Founders) have been drinking in Dick Macks for years and always wanted to collaborate with the lads to put something truly beautiful behind the bar.


The label is in beautiful flowing Dingle Irish, the first Irish whiskey bottling to have its label totally in that dialect. The decision was made to do the release in Irish as everything about the bottle represents Dingle. From the label, inspired by Dingle to the liquid and the language, this is Dingle in a glass.


Completing the story, the artwork was created by Cork-based artist Silvio Severino (@loop_conspiracy), whose design captures Dingle’s otherworldly spirit — timeless, magical, and alive with stories. The label speaks to the lads as they’ve often found themselves going to Dingle for a night and leaving 4 days later….

About Redacted Independent Bottlers

When you talk about Redacted Independent Bottlers, there’s only one place to begin: with two best friends and a dream. Co-founded by Michael Cowman and Ronan Collins, Redacted was born from a shared love of whiskey, transparency, and bold design.


The idea first sparked on a trip to Speyside, Scotland, celebrating Michael’s 30th birthday in the heart of whisky history. Back home in Ireland — one living North, the other South — the pair spent years exploring distilleries, visiting pubs, and tasting some of the finest whiskeys the world has to offer. Redacted Whiskey 003 will be available exclusively at Dick Mack’s Pub, the Redacted Independent Bottlers Website and an extremely limited number of specialist retailers from Thursday September 11th, with limited bottles released. Collectors and enthusiasts are

encouraged to act quickly, as previous Redacted releases sold out within days.
