After a sensational kickstart to D-8TE, the season’s must visit destination, Roe & Co is back with the release of the next phase of restaurant bookings.
Situated at the iconic former Guinness Power Station,in the heart of Dublin’s buzzing Liberties district, the Roe & Co Distillery will next play host to Bahay and Nightmarket who are set to bring their unique take on celebrating flavours from around the world to the Roe & Co Dublin 8 Cocktail Village.
The bookings for these flavoursome restaurants have been highly anticipated since the launch of D-8TE so people will be pleased to hear that bookings for the first round of bookings are now open. Bahay and Nightmarket are going to be bringing menus packed with flavour to D-8TE.
Mouth-watering set menus with big flavours, vibrant colours, exciting and playful dishes, each menu will also feature a unique curated Roe & Co whiskey cocktail pairing that is inspired by the variety of dishes. Fun and flavour are at the centre of every aspect of the Roe & Co Distillery experience and D-8TE is no exception!
The third chef to take over the Roe & Co airstream at the Cocktail Village is Chef Richie Castillo. No stranger to Dublin 8, Richie previously spent time cooking at Bastible and Clanbrassil House. A big fan of bold flavours, Richie is hugely passionate and inspired by his Irish Filipino culture. Showcasing the food he grew up with, Richie will be bringing the very best in Filipino flavours to D-8TE.
Having just recently announced his brand new pop-up Bahay, this will be the first time that people will have the opportunity to experience his serious punch of flavour. Speaking on his residency at D-8TE, Richie said: “I am really excited to bring Filipino food to D-8TE. This will be my first time to showcase Bahay and my style of cooking so I’m excited to get into the kitchen and introduce people to some new and incredible flavour profiles. It’s going to be deadly.”
Pairing Filipino flavours with the best of Irish ingredients, diners can expect big, bold, zingy flavours. Richie’s menu will includes Inihaw na Manok, grilled chicken thighs marinated in banana ketchup; Pandesal, a yeasty bread roll served with whipped chicken fat annatto butter; Beef short Rib Kare Kare , braised short rib in a peanut sauce, green beans, bok choy and shrimp paste; plus so much more. Catch Richie at Roe & Co Distillery for the second and third weekend in July where you’ll fall in love with his dishes and Filipino flavours.
Ranelagh’s Nightmarket will join the line-up with an exciting regional Thai menu. Heading up the kitchen is Head Chef and owner Jutarat Suwankeeree, also known as ‘R’. Incredibly passionate about Thai cuisine, ‘R’s style of cooking comes from ancient Thailand, a style that she grew up with and constantly upskills in by regularly going back home. Nightmarket is some of the most authentic Thai food you can experience in Ireland.
Speaking on the collaboration with Roe & Co, ‘R’ said: “Our passion has always been to introduce our customers to the authentic dishes of regional Thailand with menus packed with big, punchy flavours, tasty food. There is so much more to Thai food than what people are used to through Thai fusion dishes. We’re looking forward to being a part of the D-8TE experience and can’t wait to celebrate the return of gatherings with family and friends over a delicious, authentic Thai meal”.
Vibrant dishes packed with the perfect blend of spicy Thai flavours of sweet and sour, Nightmarket’s menu will include dishes such as Kanom Jeeb, steamed Thai dumplings with prawns, scallops, crispy shallot, soy and a rice vinegar dip; Hor Mok, steamed sea bream set in red curry paste and egg, in a banana leaf cup, and Moo Yang Nahm Tok, grilled marinated pork neck, sticky rice & nahm jim jaew.
Nightmarket will be in residence at D-8TE for the last two weekends in July, with an authentic menu that will leave you with a greater appreciation of Thai food.
Supporting local has never been more important and Roe & Co is proud to play their part supporting their foodie neighbours of Dublin City.
With amazing restaurants to try, a different one each fortnight, offering set menus priced at €40 per person, with the opportunity to explore curated Roe & Co whiskey cocktail pairings at €30 per person.
