Grace's Rum & Raisin

It was National Rum Day yesterday and I was sipping on Grace O'Malley Rum Cask Whiskey to toast the occasion (also, ran outta rum🙄).

I decided to put this cocktail together, with ingredients I had at home, after contemplating it a few times previously. It's a sweet and refreshing whiskey cocktail, try it and see what you think... let's call it "Grace's Rum & Raisin"'⠀

Ingredients;⠀

▪︎60ml Grace O'Malley Rum Cask Finished Whiskey⠀

▪︎20ml Raisin Syrup*⠀

▪︎30cl Simple Syrup ⠀

▪︎60ml Tonic Water⠀

▪︎3 Dashes of Angostura Orange Bitters ⠀

▪︎Some Raisins for syrup & garnishing ⠀

To make;⠀

Put the above ingredients, with some ice, into a cocktail shaker (or well sealed jar/container). Shake easy for a few seconds as the tonic water may fizz up/pop the container) and drain over a glass half filled with ice cubes. Garnish with a few Raisins, which you can eat at the end also.

*To make the syrup, combine 60ml of Water and a handful of Raisins in a pot or saucepan. Bring it to the boil, stirring and muddling the raisins until they are mashed, lower the heat and remove form the hob.You should be left with around 20-30ml of syrup, depending on how soon the heat was reduced. Let it cool a little, then you have 2 options.. 1) strain to remove any Raisins ⠀

2) pour straight into your shaker as is, mashed raisin included. ⠀

I opted for the 2nd option, I think you get a little more flavour this way but note that you will get particles sneaking through the strainer, which is totally fine!


Perhaps it's an idea to add this to some vanilla ice cream and make the Pirate Queen float!?
