Laura’s Restaurant unveils new Summer Tasting Menu & a fresh addition to their Courtyard Bar

In just six months, Laura’s has become one of Dublin’s most talked-about rooftop dining spots. Now, the restaurant atop Old Fashioned Sam’s unveils a completely reimagined Summer Tasting Menu curated by the Chris Kelly Group Head Chef Mitchell Clarke and the talented kitchen team at Sam’s, alongside a brand-new bar addition in its iconic courtyard space, designed to further streamline service and enhance guest flow.

“This menu is all about vibrant flavours and relaxed elegance,” says Mitchell Clarke, Group Head Chef. “We’ve created dishes that are fun to share, exciting to taste, and work beautifully whether you're popping in casually or going all-out with friends. I want guests to feel like they can create their own tasting journey and be surprised by just how good it all is. We carefully tested this new menu to ensure there’s something to delight every palate.”

Two Tasting Menu Options That Hit All the Right Notes:

  • Any 3 Red Diamond Dishes – €44.95

  • Any 3 Gold Diamond Dishes – €49.95

  • Add Any Dessert for €8


Guests can mix and match across From the Garden, From the Sea and From the Grill, with standouts including:

  • Sticky Duck Salad – Hoisin duck with crispy skin, pomegranate & seasonal greens

  • Stuffed Peppers – Fire-roasted peppers filled with spiced Mexican rice, seasonal vegetables and hummus (vegan)

  • Spiced Tempura Monkfish – With golden crust and punchy mango chutney

  • Surf & Turf – Flame-grilled fillet steak with marinated gambas & peppercorn croquette

  • Whipped Brie – Topped with toasted almonds, chilli garlic honey & pillowy focaccia

  • Pan-Seared Sea Bass – With coconut broth, fondant sweet potato & mango salsa

Desserts are equally indulgent, from Banana Bread & Ice Cream with dulce leche to the house-made Honeycomb Brownie.


A New Addition to the Courtyard Bar

While Laura’s already boasts Dublin’s largest rooftop courtyard with a retractable roof, this week sees the launch of an additional, all-new bar structure within the courtyard itself, built to streamline service and offer a more seamless experience across the multi-level venue.

“The courtyard has always been the heart of Old Fashioned Sam’s, it’s a stunning space, and now with this new additional bar in place, it flows even better,” says Liam Kelly, co-owner of Old Fashioned Sam’s. “Guests can now enjoy pre-dinner drinks, head upstairs for the new tasting menu, and easily settle back down into the courtyard with cocktails or desserts. This final touch really completes the vision we had for the venue.”


Kelly adds: “With DJ’s every weekend and a completely retractable roof, the huge courtyard is also one of the funnest spots in Dublin now, particularly if we have a sunny day! It's just incredible!”. 

Since its launch earlier this year, Laura’s Restaurant has earned a loyal following and glowing praise for its chic interiors, warm service and exceptional value. The arrival of the summer menu signals the start of a fresh culinary era, one that puts style, value and flavour first.

Opening hours: Monday–Thursday from 4pm, Friday from 3pm, Saturday brunch from 10:30am and Sunday brunch from 12pm. Walk-ins welcome.
