Lou Robbie partners with ALDI to show customers how to create a magnificent steak dish without the fuss or hefty price tag

Chef Lou Robbie has partnered with ALDI to show just how easy it can be to create a restaurant quality dining experience at home with affordable, quality ingredients. Her latest recipe includes ALDI’s award winning Specially Selected Irish Black Angus Sirloin €9.99 (2 Pack), served with creamy white bean and parmesan purée and finished with a vibrant salsa verde. As more people choose cosy nights in over expensive restaurant outings, this recipe offers shoppers an easy way to enjoy elevated dining at home, without the premium price tag.

Sirloin Steak with White Bean and Parmesan Purée and Salsa Verde

Serves 2

 

Ingredients:

For the steaks

  • 2 Specially Selected Irish Black Angus Sirloin

  • Salt and black pepper

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 2 garlic cloves, lightly crushed

  • A few thyme sprigs (optional)


For the white bean & parmesan purée

  • 1 tin cannellini beans, drained and rinsed

  • 1 garlic clove, chopped

  • 2 tbsp olive oil

  • 40g grated parmesan

  • Juice of ½ lemon

  • 3–4 tbsp warm chicken or veg stock

  • Salt and pepper


For the salsa verde


  • 1 packed handful parsley

  • Small handful mint or basil

  • 1 tbsp capers

  • 3 anchovy fillets (optional but excellent)

  • 1 small garlic clove

  • Zest and juice of ½ lemon

  • 3 tbsp olive oil

  • Black pepper


Method

1. Make the white bean purée

  • Add the beans, garlic, olive oil, parmesan, lemon juice, and warm stock to a blender or food processor.

  • Blend until smooth and creamy.

  • Season with salt and pepper.

  • Keep warm on low heat if needed.

 

2. Make the salsa verde

  • Finely chop the herbs, capers, anchovies, and garlic.

  • Mix with lemon zest, lemon juice, and olive oil.

  • Taste and adjust with more lemon or oil if needed.

 

3. Cook the steaks

  • Pat steaks dry and season generously with salt and pepper.

  • Heat a frying pan until very hot.

  • Add oil and sear steaks:2–3 mins per side for medium-rare / 3–4 mins per side for medium

  • Add butter, garlic, and thyme for the final minute and baste the steaks.

  • Rest steaks for 5–7 minutes before slicing.

 

4. Plate up

  • Spoon the white bean purée onto plates.

  • Slice and place steak on top.

  • Spoon over salsa verde.

  • Finish with extra parmesan and black pepper if you like.

 

Nice side options to serve it with include:

  • Charred tenderstem broccoli

  • Roasted cherry tomatoes on the vine

  • Roasted potatoes

  • Rocket salad with lemon dressing
