James and Aidan’s BBQ Tips
1. Be prepared. Before you start cooking, make sure you have all your utensils and tools nearby and on standby. That way, you can concentrate on controlling the BBQ.
2. Get your coals on early, ensuring you get them hot and white. Do not rush or start to cook until the heat is consistent. Give yourself plenty of time, stay with your BBQ and observe the food cooking. Thin meats like burgers and chicken can burn fast while meats with bones (chicken wings, thighs, etc.) can burn on the outside while staying raw inside.
3. Make sure you invest in a good food temperature probe. Depending on the ingredients in your marinade, this can make your grill either smoke uncontrollably or food can stick easy. Use thick slices of lemon or citrus on the grill to rest delicate meats and fish on so they don’t stick and crumble. This will also add another dimension of flavour to your food.

Cajun Mix for Marinade
Ingredients
• 500g Ready, Set…Cook! Paprika
• 150g Ready, Set…Cook! Sea Salt Grinder
• 200g Ready, Set…Cook! Garlic Granules
• 50g Ready, Set…Cook! Cayenne Pepper
• 100g Ready, Set…Cook! Black Pepper Grinder
• 100g Ready, Set…Cook! Dried Oregano
Method
1. Mix all together and hold in an airtight container.
2. Use as a dry rub or mix with a small amount of oil as a marinade.
Mexican Street Corn on the Cob
Ingredients
• 4 Nature’s Pick Corn on the Cob
• 100g Clonbawn Sour Cream
• 100g Emporium Greek Feta Cheese
• 2 Nature’s Pick Limes
• 10g Nature’s Pick Red Chilli, finely chopped
• 2 Nature’s Pick Garlic Cloves, peeled and minced
• ½ tsp Ready, Set…Cook! Smoked Paprika
• Ready, Set…Cook! Black Pepper
Method
1. Griddle, grill, or BBQ the corn for about 15 minutes, turning as you cook, until charred and cooked.
2. Grate the rind from one lime and juice it.
3. Pour the sour cream into a bowl with the rind, juice, smoked paprika, chillies and some black pepper, then mix well.
4. Once the corn is cooked, brush with the lime sour cream.
5. Sprinkle with feta cheese and serve with lime wedges on the side.
