‘The Full Irish’ Tasting Menu at Wildflower Restaurant

Just in time for St. Patrick’s Day 2022, Adrian Martin has launched his new fully Irish Tasting Menu in The Wildflower Cellar at his recently opened Wildflower Restaurant by Adrian Martin on Dublin’s South Richmond Street.

The 10-course tasting menu, which also includes snacks and surprises, consists solely of Irish produce. The menu also offers a selection of Irish wines which he describes as some of the best wines he has tasted.

Adrian says “It is a real challenge to create an extensive fine dining menu that is one hundred percent Irish, however when you give a creative team a task like this it can push boundaries and I believe we have created something very special. Irish produce and ingredients are really important to me and sourcing the best and supporting small producers is something that gives me immense pleasure. I hope our guests enjoy a truly contemporary Irish dining experience.” In line with Adrian’s commitment to using the most sustainable sources as well as local suppliers, the dishes on the fully Irish Tasting Menu include many well-known artisan producers as well as suppliers he has discovered through dedicated research. Dishes include Fermented Ballymakenny Potato Bread with Cultured Butter; Flaggy Shore Oyster with Roasted Koji Butter and Meadowsweet; Artichoke and Woodruff; Quail Egg, Cabbage Ash, and Bacon; Pomme Soufflé and Purple Potato with Young Buck Cheese; Chicken Skin, Foie Gras and Fermented Blackberry; Cep Custard, Chanterelles and Truffle; Hand Dived Scallop with Elderflower and Onion Miso; Line Caught Pollock with Wild Garlic and Fermented Celeriac; Squab Pigeon with Mushrooms; Milk Ice cream with Green Gage and Burnt Sage Granita; Elderberry Soufflé with Fig Leaf; Seaweed and Rhubarb Custard Tart with Wood Sorrel and Meringue.
