If you're looking for a simple, refreshing treat to make the most of Irish raspberry season, these Raspberry Flax Jam Yogurt Clusters are well worth adding to your summer recipe list.
Made with just four ingredients, this freezer-friendly recipe combines the natural sweetness of raspberries with creamy plant-based yogurt and Linwoods Cold Milled Flaxseed, creating a delicious snack that's perfect for warm afternoons or as a lighter dessert.
Not only are they easy to prepare, but they also provide a source of fibre and plant-based omega 3 thanks to the addition of flaxseed.

Raspberry Flax Jam Yogurt Clusters
Makes: 4–6 clusters
Preparation time: 10 minutes (plus freezing time)
Ingredients
150g frozen raspberries
1 tablespoon maple syrup
3 tablespoons Linwoods Cold Milled Flaxseed
200g vanilla plant-based yogurt
Method
Place the frozen raspberries in a microwave-safe bowl and heat for 30 seconds to 1 minute until softened.
Stir in the maple syrup and Linwoods Cold Milled Flaxseed.
Leave the mixture to stand for around 10 minutes, allowing the flaxseed to naturally thicken into a jam-like consistency.
Line a tray with baking parchment and spoon 4–6 small mounds of the raspberry mixture onto the tray.
Freeze for at least two hours, or until completely firm.
Once frozen, dip each cluster into the vanilla plant-based yogurt until fully coated.
Return the clusters to the tray and freeze for another hour until the yogurt has completely set.
Top Tip
Store the finished clusters in an airtight container in the freezer for up to two weeks. They're ideal as a grab-and-go snack whenever you fancy something cool, creamy and fruity.
