Two Summer Salads That You Must Try!

With Irish summer in full swing, Linwoods have shared two summer-ready salads that are as vibrant and refreshing as they are nutritious. Both would be perfect for any health features, summer food round-ups, or easy entertaining content you have coming up.
The Smashed Cucumber Salad is a crunchy, creamy salad that is packed with flavour from zingy lemon, savoury feta, rich pistachios, and Linwoods Shelled Hemp Seeds. While cucumber salads are very in at the moment, it’s the ultimate light lunch or BBQ side. Even better, it’s a natural energy booster. Thanks to the Linwoods hemp seeds, which are rich in Thiamine (Vitamin B1), magnesium, iron, and other key nutrients that support normal energy-yielding metabolism.
The second summer salad is on the sweeter side. The Zingy Lime Fruit Salad is bursting with juicy summer fruits and a zesty lime dressing that brings everything to life. It’s finished with a sprinkle of Linwoods Flaxseed, Sunflower, Pumpkin & Chia Seeds with Goji Berries. This is a blend that adds fibre, omega-3, and essential vitamins like magnesium and iron, which help support energy levels, immune function, and overall wellbeing, much needed during the busy summer months when routines are full and energy can dip. Smashed Cucumber Salad
Preparation Time: 10 minutes
Servings: 2-4
Ingredients:
400g cucumber, chopped into short thumb-sized pieces
100g feta or dairy-free feta alternative
3 tbsp extra virgin cold-pressed olive oil
3 tbsp fresh lemon juice
40g roasted and salted pistachios, chopped
30g Linwoods Hemp Seeds
2 tbsp chopped fresh dill
½ tsp salt
Black pepper and olive oil to serve
Directions:
Lay the chunks of cucumber on a chopping board cut / inner / seed side down. Lightly smash with the side of a large knife.
Place the prepared cucumber into a large bowl.
Mash the feta, olive oil and lemon juice in a separate bowl. Add it to the cucumbers.
Add the pistachios, hemp seeds, dill and salt to the bowl before giving everything a good mix.
Serve as is, drizzled with a little more olive oil and a generous sprinkle of black pepper.

Zingy Lime Fruit Salad
Preparation Time: 10 minutes
Servings: 9-10
Ingredients:
1 ripe mango, diced
2 kiwis, peeled and diced
100g blueberries
100g strawberries, diced or sliced
100g blackberries
2 tbsp fresh lime juice
60g honey or maple syrup
2 - 4 tbsp Linwoods Flaxseed, Sunflower, Pumpkin & Chia Seeds and Goji Berries
Zest of 1 lime
Fresh mint to serve
Directions:
Mix all the fruit in a large bowl.
Whisk together the honey or maple syrup and fresh lime juice.
Pour the fruit syrup over the fruit, mix well to combine.
Stir through milled flaxseed mixture.
Serve with lime zest and fresh mint, or mix through a little more if desired.
Delicious as is or served with some Greek yoghurt or plain coconut yoghurt for a dairy-free option.
